Badgers Live Sustainably! 🌎

Celebrate Earth Day with us during lunch on Monday, April 22, at any market! We are highlighting our many different sustainability focuses at each station!

Local Station

At Buona Cucina – featuring ingredients grown and/or produced in the state of Wisconsin. Prioritizing local products supports local businesses and reduces the distance food needs to travel from farm to plate. Whenever possible, aim to support local growers and producers by getting more local food into your diet!

  • Menu Items:
  • Superior Fresh Salmon
  • Jones Dairy Farm Ham
  • Johnsonville Brat

Seasonal Station

At Capital City Pizza – eating seasonally challenges us to consume only foods that are grown in our area and are ready for harvest at this time of year. Seasonal diets support the variability of crops from local producers and embrace natural ecosystem cycles.

  • Menu Items:
  • Margarita Pizza
  • Spring Vegetable Pizza

Low Carbon Station

At 1849 – highlights items with a low carbon footprint, meaning ingredients featured release lower amounts of carbon dioxide in their production, manufacturing, and transportation. In general, fruits, vegetables, and organic products tend to have significantly lower carbon outputs than meat and crops produced using high amounts of chemical fertilizers and pesticides. The carbon footprint of the food is calculated through each step of its production journey, from seed to table.

  • Menu Items:
  • Green Dragon Bowl
  • Lemongrass Tofu

Indigenous Station

An important facet of Indigenous foodways and honors Native American agricultural traditions.

  • Menu Items:
  • Three Sisters Salad over Mixed Greens
  • Roast Game Hen with Berry Sauce
  • Wild Rice Sweet Potato Hash
  • Blue Corn Mush

Plant Forward Station

At Fired Up – highlights fruits and vegetables as the main feature of the menu. Around 83% of greenhouse gas emissions attributed to the average American diet comes from consuming animal product. Avoiding animal products like beef, pork, and dairy event just once a week can reduce your carbon footprint significantly!

  • Menu Items:
  • Black Bean Burger
  • Sandwich Wrap Chick’n Crispy Orange

Water-Friendly Station

At Great Greens – featuring foods that were produced, manufactured, packages, and prepared using very little water. To reduce your own water footprint, try swapping out a water-intensive food for a water-friendly food at least once per week.

  • Menu Items:
  • Chicken Noodle and Coconut Curry Cauliflower Soups
  • Full Salad Bar (Featuring local products and items grown on the Dining Campus Farm)
